Dressing from Getryggen!

My dear niece Shirin with family has a summer cottage in Getryggen in the region of Hälsingland,  Sweden, a wonderful place where visitors can fully charge their batteries! This is the place where you just do whatever you want.
We gathered there to celebrate Kahan (nephew) and Tina (his wife) who together became 100 years! I made the dinner and Shirin made the salad dressing that was incredibly good! Asked to get the recipe of course!
You will find that the dressing is suitable for many things, such as a sauce with BBQ dishes, dips, etc. If you want to serve it as a dip, you need to make it a little stronger and mix the dressing with some Dijon mustard, one tablespoon is enough for the whole batch, also mix in some sour cream. You just have to taste and adjust to your own taste. Shirin doubles the batch because it is vanishingly delicious and keeps in the fridge for a week.

Ingredients for a double batch

80 grams of rucola
2 garlic cloves
4 teaspoons white wine vinegar
1.5 dl olive oil (8 tbsp)
4 ml  salt
2 teaspoons honey

Mix everything in a mixer and run it until everything has been mixed. Pour into a bowl and allow to set for a while at room temperature.

I have experimented with the dressing and found that some dijon mustard enhances the taste even more especially if you want to use it as a drip. 1 tablespoon for the whole rate above. Then mix in a little sour cream if you wish to get a little thicker sauce that you can dip in.
