We have a fantastic rhubarb plant in our garden, we try to use it as much as we can during the summer. Rhubarb pie is absolutely a favorite during summer, easy and incredibly good. This pie has a Persian touch with cardamom and rose water, a fantastic combination I have to say. One can exclude it of course but be brave and dare a little! The pie also contains some nuts that can be excluded if you are allergic. I found the basic recipe online many years ago but can’t find it back now. You might find this odd but the Swedes eat different kind of fruit purées, (i.e. strawberry) together with milk as a snack or a light lunch during summer time. I think you call it “Fool”.
I definitely found it odd when I had it for the first time in 1966 – I considered it to be a dessert! But now after 53 years in Sweden, I just love it especially when we have a very hot summer day and I am not very hungry, it is indeed very refreshing. Love to make ice cream as soon as spring approaches! This ice-cream or gelato is both delicious and beautiful! I buy Swedish blueberries from the freezer section; they have the best taste in my opinion before we get fresh Swedish blueberries. I just love strawberries and nowadays one can find fresh strawberries in the store already in March, but the price is rather high if you want to use it for a sauce or syrup – that is why I chose to use frozen berries for the syrup. I have learned that there is a difference between meringues and meringues! It is said that meringues originate from the town of Merringen in Switzerland. The meringues available to buy are pretty dull in my opinion. It is quite easy to make meringues yourself so why buy?
Use areas for meringues are many, I myself like to make meringues and serve it with ice cream or gelato. Simply put, your own imagination is the limit 😊
Our kids were coming over for Easter and I wanted to make some Gelato, after making the Gelato I had many egg whites left, I know that you can freeze the egg whites but I came to think of Budapest roll which is a Swedish cake and not Hungarian as one might think. The creator is said to be Ingvar Strid who was a confectioner from Vetlanda, the reason why he called it Budapest roll remains a mystery.
