This is a very easy blueberry marmalade with an oriental taste.
I love blueberries in all shapes and forms. I had some frozen blueberries that I needed to use! Came to think about Blueberry marmalade. What distinguishes this marmalade from regular blueberry marmalade is its oriental flavor – blueberries, rose water and cardamom. Oh, it is so delicious!
I use a special sugar (Jam sugar) that contains pectin.
Ingredients for about 0.5 liters (2 cups) of marmalade
8 dl blueberries (3,2 cups) fresh or frozen
4 dl (1,6 cups) of jam sugar
2 tablespoons squeezed lemon
1 tbsp rose water
1 ml (1/4 of a teaspoon) ground cardamom
Method:
- Place the blueberries in a spacious saucepan along with sugar, squeezed lemon, rose water and cardamom.
- Let it boil – lower the heat and simmer on low heat for 20 – 30 minutes.
- Stir occasionally so that it does not burn.
- Let the jar and lid heat in a 100-degree (Celsius) or (37,77 Fahrenheit) oven for about 20 minutes, fill the jar with the hot marmalade and put the lid on while both the jar and the marmalade are hot.
You can store the marmalade in the pantry – but the best place is in the fridge when you have opened it.
