TZATZIKI!

Today I am going to serve cevapcici and of course tzatziki, a wonderful combination and suitable for the wonderful spring day that we have in Stockholm today. I have experimented a lot with the recipe but this basic recipe is just so easy and delicious.

Once now and then I mix in either chopped parsley or mint and sometimes I use a little (1 tbsp) of the dressing mixture that I have blogged about before: “Dressing with many uses PoP”.

The most important thing is that you taste and correct the seasoning according to your taste.

Ingredients for 5 dl (2 cups) of tzatziki
4 dl plain yogurt
1 large cucumber
2 – 3 garlic cloves
2 tbsp olive oil
1 tsp salt
1 tbsp lemon or lime juice

Method:

  1. Make sure that your yogurt has as little liquid as possible.
  2. Peel and grate the cucumber on the coarse side of the grater, use a kitchen towel and squeeze as much liquid as possible from the cucumber.
  3. In a large bowl combine all the ingredients and mix well.
  4. Taste and correct seasoning.

For serving: put the tzatziki in a bowl, decorate with some more olive oil and some olives!
