As a child, I was quite fussy when it came to food and sweets. These cookies nevertheless were and still are one of my favorites. Very delicious and quite easy to make.
For a luxurious version – add some saffron mixed with one or two tablespoons of warm water to the dough. Wonderful cookies for Easter.
For 15 – 16 pcs
Dough
100-gram butter
210 gram of flour
1/4 of a teaspoon salt
0,5 teaspoon baking powder
1 egg yolk
125 gram of plain yogurt
1 ml baking soda
Filling
100-gram toasted walnuts
86 gram of sugar
1 egg white
0,5 teaspoon of ground cinnamon
1/4 of a teaspoon ground clove
0,5 teaspoon of ground cardamom
1 teaspoon of rose water (optional, can be excluded)
Decoration
50 – 60 gram of confectioner sugar
2 teaspoon of ground cardamom
1 – Toast your nuts in a hot pan and stir constantly until they all get a bit darker color. Be careful not to burn the nuts. Put it aside to cool.
2 – Combine butter, flour, salt and baking powder in a food processor. Run it a few laps until it becomes one big boll.
3 – In a separate bowl combine egg yolk, yogurt and baking soda, mix well and add it to your dough in the food processor and run it a few laps.
4 – Remove the dough and process it with your hands. Do not overdo it!
5 – Add more flour if needed. Measure 15 small balls and put it in the freezer while you are making the filling.
6 – Use a small mixer to mix sugar and egg white until it is foamy and well incorporated. Powder the walnuts in a mixer, add sugar and egg white mixture together with all the seasoning (cinnamon,
clove, and cardamom). Put it aside.
7 – Roll out each cookie into approx. 3 inches circle on a cookie sheet.
8 – Use a teaspoon to measure filling that you put in the center of the flat dough. Now you can either put together the edges and form a ball or you can fold the dough and seal the edges as shown in the instruction movie.
9 – Heat a pan with some vegetable oil. Wait until it is at least 140 degrees (Celsius) before you insert each cookie. Fry until the cookies are golden, it takes about 3 minutes on each side.
Put the cookies on kitchen towel before you put them on a serving
dish and sprinkle with confectioner´s sugar mixed with ground cardamom.
