A wonderful salad that my sister Payande use to make. Nice as a starter. If you want some crunchiness add some roasted Pine nuts on top before serving. My guests liked it a lot.
I always make a lot of dressing because it goes well with all kind of salad!
For 2 persons
Mushrooms (as much as avocado (I usually weigh it)
Some lemon juice.
1/2 dl vinegar
1 dl olive oil
2 – 3 tablespoons Dijon mustard
2 ml salt
1 ml black pepper
1 tablespoon of squeezed lemon
1 teaspoon powdered Fenugreek leaves
- Core the avocado. Slice it. Put it all in a bowl.
- Pour some lemon juice over so that it does not change color.
- Peel the mushrooms and cut into thin slices, pour it over the avocado and mix it gently.
- Mix the dressing. Pour and allow to stand at room temperature for 30 minutes.
