Avocado salad and dressing with a different touch

A wonderful salad that my sister Payande use to make. Nice as a starter. Add some roasted Pine nuts if you want to achieve some crunchiness. Add it on top before serving. My guests loved it!
I always make a lot of dressing because it goes well with all kind of salad!

For 2 persons
2-3 avocado
Mushrooms (as much as avocado (I usually weigh it)
Some lemon juice.

1/2 dl vinegar
1 dl olive oil
2 – 3 tablespoons Dijon mustard
2 ml of salt
1 ml black pepper
1 tablespoon of squeezed lemon
1 teaspoon powdered Fenugreek leaves


  1. Core the avocado. Slice it. Put it all in a bowl.
  2. Pour some lemon juice over so that it does not change color.
  3. Peel the mushrooms, cut into thin slices, pour it over the avocado, and mix it gently.
  4. Mix the dressing. Pour and allow to stand at room temperature for 30 minutes.
